On sprouting, the seed becomes a veritable nutrient factory with a greater concentration of Vitamin A, Vitamin C, Vitamin E, Vitamin K and B-complex. Sprouts are a good source of fibre .
Preparation - 1] Soak 1-2 tbsp of sprouting seeds for at least 8 hours in fresh, cool water in a wide mouth mason jar. 2] Drain and rinse the sprouts. Repeat Step 2 for 3-5 days, until your sprouts are ready to eat.
These micro-greens are high in protein, vitamins, minerals, essential amino acids, iron and calcium.
